A harvest in the forest, protected from pollutants
Our birch sap is harvested on birches with a protected forest of Vanoinval near which no chemical is used.
A craft and reasoned harvest!
Our harvest is handicraftsmanized: in the spring, when the sap goes up, a small hole is drilled in the bottom of the tree in order to capture the minerals of the soil at most close to the source. A food grade pipe is introduced. The sap flows for a few weeks.
We select birches carefully: the sap is taken only on those being healthy. Growing or sick birches need all their sap to grow or heal.
100% birch sap, in the respect of the cold chain!
When harvested, the sap is conditioned in containers of 2 liters and 5 liters, without any addition (neither sugars nor preservatives ...), and is stored directly at the expense (in cold room) and in vacuo.

Then, in a very natural way, a few weeks after the harvest, a process starts: lactoferment. This is possible thanks to lactic ferments as well as the small amount of sugar present in the sap. In the end, there will be no more sugars, but good bacteria for your organization, while allowing to prolong the duration of consumption of the sap.
In other words, the sap is borne with time, the bioavailability of certain minerals and some vitamins is improved, a few months after harvest.
It's all the profit for your flora and it allows you to benefit from the birch sap all year round and not only in the spring when harvesting!

The birch sap is a transparent liquid similar to water. Its slightly sweet taste fades as the lactofermentation process unfolds.

Originally from Europe and Asia, birch, Betula Pendula, is easily recognizable thanks to its white, smooth and shiny bark. This caduc tree belongs to the Betulaceae family, just as the alder, charms and hazelks.
It grows mainly in soils rich in silica, in a large part of Europe apart from the extreme north and the Mediterranean region. It can reach a height of 15 to 25 meters for a spread of 10 meters.
We can almost use everything in the birch! In addition to sap, leaves and bark are also used.
According to the analyzes carried out at each harvest, our birch sap harvested by hand in our Walloon forests has a quantity of silicon that increases as and when years. Thank you Lady Nature to bring us what we need!
