Hibiscus: the red flower behind bissap and karkadé

The hibiscus used in drinks is Hibiscus sabdariffa, a plant of the mallow family, also known as roselle. After flowering, the base of its flower forms fleshy, deep red calyces: these, once dried, are sold as “hibiscus flowers”.

Probably native to Africa, it is now grown throughout the tropics. It has a different name depending on the country: bissap in West Africa, karkadé in Egypt and Sudan, flor de Jamaica in Mexico.

Calyces

The part used is not the petal, but the fleshy casing that surrounds the fruit.

An intense red

Due to its anthocyanins, which colour water within a few minutes.

A tangy flavour

Similar to cranberry or redcurrant, with no theine.

Composition

What do hibiscus flowers contain?

The colour and taste of hibiscus calyces come from three main families of compounds:

Anthocyanins

Mainly delphinidin-3-sambubioside and cyanidin-3-sambubioside, the red pigments.

Organic acids

Citric, malic and hydroxycitric acids, responsible for the marked acidity.

Other polyphenols

Phenolic acids and flavonoids, as well as a little vitamin C.

Forms

Infusion, bissap or hibiscus extract?

Hibiscus tea can be drunk hot or iced. In West Africa, bissap is made by steeping the calyces in water, then sweetening it and often flavouring it with mint, ginger or orange blossom. Hibiscus also features in many herbal tea blends, to which it lends its colour.

In cooking, the calyces are used to make syrups, jams and jellies, and the young leaves are eaten as a vegetable in several African countries. In food supplements, it is found as calyx powder or as an extract, sometimes standardised for hydroxycitric acid.

What research says

Hibiscus benefits: what does the science say?

Rich in anthocyanins, hibiscus is the subject of a great deal of research. Researchers are particularly interested in the composition of the calyces depending on the variety, the stability of their pigments and how the body uses these compounds.

To date, no health claim relating to hibiscus is authorised in the European Union. This research therefore does not allow any particular effect to be attributed to an infusion or a food supplement containing it.

Frequently asked questions

Hibiscus FAQ

Are bissap and hibiscus the same thing?

Yes: bissap is the name given in West Africa to the calyces of Hibiscus sabdariffa and to the drink made from them. Karkadé is its name in Egypt and Sudan.

How do you make hibiscus tea?

Pour simmering water over a tablespoon of dried calyces and leave to infuse for five to ten minutes. For an iced drink, leave to infuse for longer, then chill.

Does hibiscus contain caffeine?

No, hibiscus does not contain any. Blends that combine it with guarana or maté, however, do. During pregnancy and breastfeeding, ask your doctor for advice.

Where can you buy hibiscus flowers?

In African or Middle Eastern grocery shops, organic shops and online. At NATURAMedicatrix, hibiscus is available as a juice, in infusions and as a food supplement.
